What about things that focus on a blend of something, like crystal spiders or anything that's a mix of mineral (rock/metal/lava) and a creature? Or should it be strictly singular species specific?

(apologies in advance. I'm a severe pedant on details because I can easily go off rails with ideas, so I like limits on my own things before I start.)
Unfortunately, no outright dragons at this time. :c It might be easier to start with a category of critter, and seeing if the kind of mythical creature has a connection to it. Like if you chose a snake (under Reptilia), pulling inspiration from nagas or lamias would make sense. (And for Audrey II... well. With a flytrap as the base Terra soul, it's a reasonable source for inspiration!)

Generally, blending across soul types isn't possible (so no mixing rabbits and wolves). Blending within a soul type (like picking goat and deer traits for a Ruminantia, or spider and crab traits for an Arthropoda) is allowed.

Rock creatures (including mixes of minerals, metals) are totally viable under the Golem type!

A traditional chimera (goat/lion/snake), and for that matter any other kind of chimera would be indirectly achievable through AC rewards- as there's an option there to add a second Natural Soul to a character (and... hypothetically you could just keep going with that, get real crowded in there). So a character can, in the longer term, end up with a Carnivore/Glire hybrid, or an Arthropod/Golem (for literal crystal spiders). Or any other combination!

No problem with the questions at all, I hope these explanations make some sort of sense....
